2 quart size chicken stock 'boxes'(I use rachel ray from walmart)
Small jar of Pace picante sauce (medium)
Dried Onions (in the spice isle...this makes the recipe easier)
1 chicken bullion cube
1 can of corn
1 can of black beans
1 bag of original yellow corn Doritos (don't skimp...get doritos)
I bag of shedded cheddar cheese
2 chicken breasts
pinch of thyme


Dump the chicken stock in a medium size soup pot and crank up the burner to high. Add half the jar of picante sauce (remember...I'm using the smallest size). Dump about half of the dried onion container in there. Add a teaspoon or 'pinch' of thyme and the chicken bouillon cube. Throw in the chicken breasts. Boil for 10 minutes or so, and scoop out the chicken breasts. Dice up the chicken and add it back to the pot. Rinse the can of black beans in your colander...along with 1/2 the can of corn. Add it to the pot. Simmer for 5 or 10 minutes, and it's ready. To serve, put a handful of doritos in a bowl, and top it with the shredded cheese. Ladle the soup on top. It's pretty damn good...
