Jalapeno pepper hollowed out with some cream cheese and dove breast stuffed inside wrapped in bacon and grilled to perfection! mmmmmm mmmmm!

Pretty much the same as Chase. We do some marinated in coke & allegro with onion and jalapeno wrapped in bacon too. Cant wait til Tuesday

early bird enchiladas..........

Ingredients
3 tablespoons vegetable oil
12 boneless dove breast
Salt and pepper
2 teaspoons cumin powder
2 teaspoons garlic powder
1 teaspoon Mexican Spice Blend
1 onion, chopped
2 cloves garlic, minced
16 corn tortillas
1 1/2 cups enchilada sauce, canned
1 cup shredded Cheddar and Jack cheese
Served with mexican rice grin

Directions:
Preheat oven to 350 degrees .
In a medium sized cast iron skillet add 1/4 cup of canola oil at medium heat , cook the corn tortillas for 15-20 seconds and set aside , then cook the dove breast halves the oil for 3-5 minutes , cube the dove and return it to the skillet. Add the onion, cumin, mexican spice blend, ground black pepper. Stir in salt, tomato sauce, water, chili powder, and garlic and simmer for 10 minutes.

Roll the incredients in the corn tortillas . Then arrange in a 9x13 inch baking dish. Cover them with the sauce and 3/4 cup Cheddar cheese.

Bake uncovered in the preheated oven 20 minutes. Cool 10 minutes before serving.

Quick rice with some tomato sauce & cilantro added

Wash it down with a frosty cold one

DOVE RECIPE

*40.00 gas to dove lease
*150.00 for dove lease
*87.50 for 9 boxes of 7 and a half chilled shot
*35.00 for Old Mil after-the-hunt tailgate party

Total cost for 12 dove...312.50

Prepare dove breasts
Salt and pepper
Fry in cooking oil until medium well

Do not eat the dove, just gaze with mournful look.

Look at the dove while eating a bologna sandwich and listening to wifey exclaim:

"YOU SPENT HOW MUCH ON THIS DINNER? HOW MUCH???? DO YOU REALIZE THE TRAILER SPACE RENT IS DUE??

I NEED CLOTHES! AND I AM NOT GETTING A JOB TO PAY FOR ALL THIS FOOLISHNESS OF YOURS!!"

I like to fillet the meat off the breast and make shish ka'bobs. I assemble them with bell pepper or Jalapeno, onion and thick sliced hickory bacon. Marinate them and season with Tex Joy or Lawry's cook over medium heat. Serve with flour tortillas, pico de gallo and an ice cold lager beer.

Similar to Chase

Put a jalapeno slice on each side of the breast and wrap with half a slice of bacon. Secure with a toothpick and grill. apply a little homemade barbecue sauce at the end of grilling.

I'm going to try what chase listed above. Sounds delicious! So do the shish ka'bobs. Might add some sausage instead of bacon.
