I use Carol Shelby often and like it. I picked up a box of Tony Cachere’s last week and thought it was damn good. It has more of a kick than Carol Shelby’s. I also picked up a box of Ballows Famous Texas Chili Seasoning. Supposedly a 50 year old recipe that’s won several chili cook offs. Has anyone ever tried Ballows? It’s a Texas owned family business.

I have always used Mortons , but it is hard to find here in East Texas, Lately I have used https://ballowschili.com/chili-seasoning.html good stuff MO

Williams chili mix and I add stuff. What will suprise you is Williams gravy mix. 1 cup of water. 1 cup of milk. It's really good. I keep it around in case I have unexpected guest and don't want to cook gravy from scratch.

I liked Shelby’s but made some Sunday and it just seemed too weak. Like it needed more powder.

Never use a mix. Grind my on chili powder from Ancho and Juahillo. This combination with various spices makes the best chili you can eat.
