I know a guy who does some of this, he generally does cajun food, he does it a a real high end hunt club in louisiana where having 100 million is considered poor so god knows what he charges.

Just hire WAWI’s chef in Keller. Ask him how much he’s getting paid and offer him a couple grand more.

I have a friend who is the chef at what I would consider a high end game ranch in Center, TX. Have no idea how much he makes, but he left a head chef job at a local restaurant to works there. When the ranch is slow, I believe he works as the private chef for the owners family.

Idk. He sends pics of what he cooks when they use him, sounds like a bunch of oil exec's, they fly in in private jets. Flyfisher boy is about the only one we have that could run with that crew as he describes it.

are you talking full time or part time during a season.
live on premises or commute?
what is avg. size of groups to be served?
if it is a live on premises position you have to take the rent equivalent into account as part of pay.
if it is just a seasonal deal you will pay more than a yr. round full time gig.
and do you want a 5 star chef or someone that took home ec in high school and works at the taco bueno.
lots to consider when you take or offer a job like this and last is what is it worth to have someone that can cook the cuisine you want cooked.
