I gave the ones on the komado 2 hrs of smoke and 4 hours in a foil covered pan. They taste amazing and look good, but the belly meat isn't as tender as I wanted so I wrapped them right in foil and put them in the oven for awhile longer. I got my grill too hot so I could cook some chicken thighs. I also threw a pack of sauasage in the sous vide for 30 minutes and gave them 2 minutes per side on the grill grates for color. The sous vide belly is going to run until I go to bed and then into the fridge and I'll do something with them another day.

I checked this afternoon and can confirm that Walmart does have pork belly. thumb
