was going to do a gumbo, but too lazy to go get oysters. did Justin Wilson chicken and dumplins instead. pretty darn good, but too much cheyenne pepper. will cut it in 1/2 next time. not so hot that i won't eat it, but too hot for civilians.

I think you've been watching too much 'Walker Texas Ranger'....Cheyenne is Bobby Sixkillers sister....Cayenne is a pepper. Anyway, ( enough teasing ) one really, really, really easy thing that works really well with the current weather: A cheap boneless ham...( Corn King for example)...throw it on the smoker and smoke the bejeebers out of it with hickory. Thinly slice (a meat slicer comes in handy for this). The key is COLD SMOKING....cold weather helps. Don't discount this out of hand...the closest thing to this you can get commercially is Cure 81....and this is IMHO, better and way cheaper!

To make it not as hot, try leaving the pepper out of the dumpling mix.....just say'in Sounds tasty
