Video improvements. More stable platform... I think this is a chest strap, I got dizzy watching it... I don't think the hat cams are any better from stability, but the rods/hands hit it less. I think you are more focused on fishing than how the video turns out, and that's what I would do. But if you want to improve your product, you'll need to adjust how you fish.
For example, you'll need to side-swipe a hook set, keep the reel seat to the side instead of in front of the camera, less turning to follow the fish.
Unfortunately it might result in lost fish...
So you'll have to decide your own priority.

Hey, you're an Aggie. Can you engineer an offset chest or hip mount? That'll work, forward facing but off to the side!

As a matter of fact, I have a buddy with a 3d printer. I bet we have enough brainpower between the two of us to figure that out.
