Hang there all the time, but don't have much trouble catching trout and reds so I don't have to eat the other stuff. don't recall many Cajuns eating it either, but some do I guess.

Spanish mackerel makes great sashimi.

Not interested in even trying jack crevealle, hard head, gafftop ( hear all the time how good they are but not interested in getting past the slime) ladyfish ( might be my least favorite fish)

Prime fish for me are small mid slot reds (tacos, half shell, baked, fried) flounder, trout. 95% of the time, this is what I catch. Croaker is great if big enough.

Don't eat much fresh water fish. Nothing farmed raised

Has anyone tried stingray wings? I have always thought it was a nice chunk of meat when I was cutting them up for shark bait.

I'd be willing to bet that many people have eaten stingray, just didn't know it.
"sea scallops" have been found for years (by myself included) to be stingray at many
seafood places. it's pretty good actually, if not overcooked.

I love stingray wings. We will fillet the meat off the wings, and cook them as you would scallops. Pretty good.

Skeeter, I'm gonna guess you never have actually tried sheepshead. Once you get past the fact that they are wearing human dentures....It's one of the best fish I ever ate. A little hard to clean, but well worth it. And man what a blast to catch!

Kings, Snapper, Dolphin, Ling, Spanish, all fair game... And we've eaten a bunch of shark. All good. No saltwater catfish!!! Always heard bonita, and Amberjack are hit and miss... Haven't caught enough of either to make a fair point on em tho...

Heard Sting ray is great...Heard Sheepshead is great...Like the carp of the sea. A lot of bones if i'm not mistaken.

Gulf fish species I have tried that are readily caught or bought that I will eat gladly in order of preference:

Red Snapper
Grouper
Flounder
Blackfin Tuna
Sheepshead
Mahi Mahi
Speckled Trout
Drum
Redfish
Croaker
Whiting
Spanish Mackerel
Bluefish
King Mackerel

I also want to try sting ray. Anything not on my list I have tried and disliked, or just won't eat for various reasons.

I have eaten and will continue to eat:

Mahi,Redfish,Sheepshead,Croaker
Mullet,Pompano,Kingfish/Spanish macks,Mangrove/Red Snapper,Gafftop,Grouper,Swordfish,Hardhead,Black drum,Cobia,Eel,Speckled/Sand Trout,Sting ray,Flounder,Shark,Whiting, Bigeye, Yellowfin tuna. Large Piggy Perch! Oh Salmon, Cod, Haddock, Pollack. --- That about covers it!
