I have a helix 7 mounted at the console and I just mounted an older 500 series sonar up at the bow and connected it to the US2 transducer in the trolling motor. Can I run both at the same time or will I get interference?

Any two units operating on the same frequency will cross-talk when their sonar pulses overlap. That can be on the same boat or different boats. I get cross-talk on Side Imaging from boats hundreds of feet away that have any brand of the imaging technology that uses 455 and 800 kHz. This is cross-talk from a boat nearby that also has Humminbird 360:

Results may vary.... My transducers are 18 ft apart. In shallow water they work fine. In deeper water they cross talk some. I notice it more on the 2d side myself. I guess I am lucky I don't have more.

I guess I am lucky I don't have more. 83 kHz will cross-talk in shallower water than 200 kHz since the spec coverage is three times as much. 60 degrees vs. 20 degrees.
