Best way of preparing Rainbow Trout?

I've noticed that the trout stocked by TPWD are very small. I've filleted many fish in my life, but nothing this small. Any ideas or ways to properly prepare a Rainbow Trout.

Why filet them? Gut them, fill the cavity with some lemon slices and seasoning, put in a pan with some white wine (not covered), and either smoke them or put in the oven. If not that then cover with cornmeal and fry them up.
I'm on other forums that deal with the old turbo powered Buicks.;)

Cook them whole
Gut and gill, and remove the scales, leave the skin on.
Then, grill over coals basting with a mix of melted butter, lemon juice, soy sauce and a bit of cayenne.
The meat will fall away from the frame and don't forget to eat the piece in the cheeks.

Clean as described above. Finely chop a red onion. Add fresh squeezed lemon juice, salt, pepper, dill, and lemon zest. Then mix all together with softened butter or EV olive oil. Place mixture inside body cavity and wrap in foil. Place foil over hot grill/coals and cook three minutes on each side.
He is truly a sick individual.

Have you ever tried baking fish in a salt dome? It's pretty easy, and the fish stays moist and delicious. Salt Dome Baked Fish

I like to smoke them on my weber with indirect low heat and some hickory wood. Cook until done, turning as needed. Then I bring them in, skin them and put them back on the smoke on some foil. Turn a few times until the meat gets a smoky color. Debone them and get some ritz crackers and cream cheese. Put some cheese on the cracker and top it with some warm smoked trout and it is delicious. I spent most of the 90's on the front range and was up high an awful lot, all areas. A guide in Buena Vista told me one time to just gut a small one, wrap it in a moist paper towel and microwave it on high for about 4 minutes. i tried it and let me tell you, after a long day of wading or hiking beaver ponds it was a quick, tasty meal, especially those little brookies.

Most of those stocked trout taste like some version of the fish food.

Most of those stocked trout taste like some version of the fish food. This is true in my experience, tried them a few times, not desirable to me at all. maybe cook on cedar plank, throw away fish them eat the plank.
