I usually try and match shakey head to worm color if possible. Blue Fleck on Black Heads same with the gp and wm Red.

For me depends on the depth and water clarity clear water I like watermelon with a zoom trick in baby bass bigger jigs and deeper most of mine are black I don't know if it matters but that's what I use

Almost all of mine are black with a few green pumpkin thrown in as well.

Overall I prefer the Green Pumpkin and would throw it exclusively if I had to choose just one. Your watermelon red heads are also a home run with me.
If you have never used Papa's Baits shaky heads you need to take a look at them. Built with quality hooks that are sharp right out of the package.

I use anything dark and have never matched colors or even worried about it. And i still catch fish with them.

Are we talking the head itself or the plastics?
I like the look of painted heads with similar colored plastics but I'd guess I've had as much success throwing an unpainted head, regardless of plastic color as I have trying to match head / body.
That said, I can tell you I caught a bunch of fish over the years throwing t-rigs with unpainted bullet lead weights, tru-turn hooks and original Stren line, no matter the worm style or color. This was all before tungsten weights, 300 brands of lines, etc...
The amount of products (not just lures) over the years have really made a lot of people over-think how to catch fish.
