Went to lewisville this morning for a little bank fishing there was no wind so the bite was far in between in 3 hrs caught a 12'' sandie, a undersize hybrid, a 10'' lmb (first ever lmb!), and a 12'' drum (first ever drum!)
so the only fish I kept was the sandie but wondering if anyone eats drum and what it taste like and how you cook it.
I went on the tpwd website and there are no limit/regulation or any information on the freshwater drum so I am not even sure if it's legal to keep them.

It's considered a non-game fish so you can keep whatever you like. They don't taste bad, but I prefer to keep them as bait for kitten fish.

small drum are good table fare(less than 18 inches), the fish is good fried or small ones gut and gilled and then place on the grill. If there larger the blood line is a bit strong. There are sections of the Frio,Bosque, and lower Quadulope where crawfish are the ticket.

Drum, or as we cajuns call em Goo, are pretty good, fry the small ones, and cook the bigger ones in the oven smothered in your favorite seasoning, Tony's, and BBQ sauce just like baking a chicken.
I am not making any decisions until the bourbon kicks in!

They're quite good, with firm white meat. It's always amazed me how people consider freshwater drum an inedible trash fish while considering their close cousins in the sea delicacies.
