Very interesting. Cornstarch is healthier than flour? Please explain. Would this work for other white fleshed fish as well? Thanks for the ideas.

Very interesting. Cornstarch is healthier than flour? Please explain. Would this work for other white fleshed fish as well? Thanks for the ideas. I'm not sure generally, but my wife uses cornstarch rather than flour when possible, because it has a lower glycemic index. (I'm prediabetic, so blood sugar is an issue.) The almondine dish really has a very, very light crust with the cornstarch. I'm not sure it would be satisfactory in more traditional approaches to battered and fried fish. I use a mixture of flour and cornstarch to make a similar dish called trout meuniere. I like cilantro in both sauces. I pan fried a hash brown patty with this one
