Live shrimp and popping cork. Really can't go wrong with that set up. As for artifical I like she dogs, gulp soft plastics and gold spoons.

Down south lures with a 1/8 jig head have been working great for me!
Will this technique work in the surf? Are the trout partial to croaker or can another smaller fish work like a small pinfish or whiting?

Spend the money and buy Croaker if you're going to fish with live bait.

Croaker will work great in the surf. You can also use mullet for trout and reds. They are usually pretty easy to cast net in the surf. I would stay away from live shrimp as there are plenty of bait stealers out there.
