Fishing has been up and down due to the cold front.

Marlin
Few Striped Marlin fishing at the Golden Gate, most fish on live bait and some on lures, we caught and released 4 on Wednesday and 2 Today.

Dorado
Dorado fishing has been up and down, we caught 19 on Monday, 1 on Wednesday, 1 on Friday and 7 today, all fish between 10 to 25 Lb, caught on lures.

Tuna
Up and down tuna fishing but good when you find the school.

Wahoo
No reports.

Rooster
No reports.

Inshore
Good inshore fishing for sierras and few skipjacks.

We have and do a few tournaments each year and can cater to fisherman who might be interested in tournament fishing. Well let’s get on with the fishing report for this past week.

WEATHER:
Over the next 7 days the Cabo San Lucas forecast suggests the average daytime maximum temperature will be around 25°C, with a high for the week of 28°C expected on the afternoon of Saturday 14th. The mean minimum temperature will be 17°C, dipping to its lowest on the morning of Thursday 19th at 15°C. Expect the week ahead to remain predominantly dry. On the whole winds are likely to be moderate.

Mahi Mahi: The Best, Simplest Method

Ingredients
1 medium lemon
4 (4 to 6-ounce) mahi mahi fillets
1 1/4 teaspoons kosher salt, plus more as needed
Freshly ground black pepper
2 tablespoons olive oil
1 clove garlic, minced
4 tablespoons cold unsalted butter, cut into 4 pieces
1 tablespoon coarsely chopped fresh parsley leaves

Instructions

Step 1
Slice and juice the lemon. Cut half the lemon into thin slices. Juice the remaining half, you should have about 1 1/2 tablespoons of juice; set both aside.

Step 2
Season the mahi mahi. Pat the mahi mahi dry with paper towels. Season all over with 1 teaspoon of the salt and a few grinds of pepper.

Step 3
Pan sear the mahi mahi. Heat the oil in a large cast iron skillet or nonstick frying pan over medium-high heat until just starting to smoke, 3 to 5 minutes. Add the mahi mahi and sear undisturbed until well browned on the bottom and the sides are cooked just past halfway up the fillets, about 4 minutes. Flip the fillets and continue to sear until just cooked through and the flesh flakes easily, 2 to 4 minutes more depending on the thickness of the fillets. Transfer to a serving platter.

Step 4
Add the lemon juice and garlic over medium-low heat. Reduce the heat to medium-low. Add the lemon juice, garlic, and remaining 1/4 teaspoon salt. Scrape up any browned bits from the bottom of the pan with a wooden spoon.

Step 5
Add the lemon slices and butter. Add the lemon slices, then stir the butter in one piece at a time, waiting until each piece is almost melted before adding the next.

Step 6
Season the sauce. Remove the pan from the heat. Stir in the parsley. Taste the sauce and season with more salt and pepper and needed. Pour over the mahi mahi and serve immediately.

SUMMER TANTALIZERS
COCKTAIL
Piña Colada (Restaurant Style!)

Ingredients
1 pound or 3 heaping cups frozen pineapple chunks
3/4 cup white rum
1 cup full fat coconut milk
2 tablespoons lime juice
1/2 tablespoon maple syrup or simple syrup (optional)
For the garnish: Drink umbrellas, toasted coconut (optional)

Instructions

1. Place all ingredients in a blender and blend until smooth. Taste and adjust the sweetness as desired.

1. Pour into glasses and garnish with drink umbrellas (required!).

BEWARE: Please beware of the guys in the street selling boat charters. If you wait till the day you are fishing and go to the dock where your boat is many times people will mislead you to another boat or dock trying to put you on a boat that was not meant for you. You need to have a person guide you to your boat, who is from a reputable charter company. This way there is no confusion or misleading. Please remember when renting Sport fishing boats in Cabo that you rent your boat from reputable and established business. Walk into a fishing fleet office and ask questions about what you are getting and what are the costs. You don't want to rent boats from vendors in the streets and you do not want to book through shady websites offering you the world. Check through travel forums about reputable fishing fleets to deal with. Look for testimonials about the fleet your booking, your charter with. Ask about what will the boat be supplying? Will it include beverages or lunches? How much does it cost to fillet your catch? Check to see if charter boat is insured? Ask about getting your catch smoked? Check cost of a fishing license. These are just a few things to consider when booking your charter boat. We will be talking more about this in the next weeks fishing report.
