Milled flax seed, Slap Ya Mama, and a bit extra salt and pepper. I didn't have any corn meal on hand so I used this instead. Worked good, tasted good and in theory should be healthier.
Filets patted dry, rubbed with a bit of olive oil then dredged in breading.
Baked at 425 in convection oven on center rack for 20 minutes. You have to adjust cooking time based on how thick the filets are.
