crappie recipe

Need some help on a crappie recipe. Hate to confess that it has been a while since I have gone fishing. But I am going to restart. I had a good crappie recipe. And I am not going to say I lost it, just misplaced it. The recipe was called "baked parmesan crappie". It is cooked in the oven.

Bread crappie filets in cornmeal seasoned with salt/ toney chacheres to taste....sauté in butter in a cast iron skillet until light golden brown, over medium low heat (setting 4 on an electric stove) approximately 5 minutes per side, (cooking time depends on the size of the crappie)...serve/enjoy...do not allow the heat to scorch or burn the butter and use a generous amount of butter in the pan...the cornmeal will absorb the butter, so replenish the butter after turning....it is called the old fashioned crappie recipe, best I recall. My wife/daughter just love this meal...good luck, and don’t allow the crappie to cook too long/hard.

I make mine with saltine crackers finely crushed and (beat)eggs.(i add extra salt and add pepper) Dip your fish in egg then in crackers and fry for 4min at 350° and víola!

Baked Parmesan Crappie

Ingredients

1 or 2 eggs
¾ cup Panko Italian or any bread crumbs
¼ cup Parmesan cheese
¼ teaspoon ground dried thyme
Fish filets
¼ cup melted butter

Directions

1. Preheat oven to 500 degrees

2. In a small bowl prepare an egg wash. In a separate bowl, mix together the bread crumbs, Parmesan cheese, and thyme. Dip the filets in the egg wash and then press into the crumb mixture to coat. Place filets in a glass baking dish, and drizzle with melted butter.

3. Bake on the top rack of the preheated oven until the fish flakes easily, about 15 minutes.

Really simple.

Crappie Fillets soaked in a bowl of milk for 1 hour.

A bowl full of Franks Red Hot

Mixed in a seperate bowl
1 Cup of Flour
1 Cup of Yellow Corn Meal
Generous Portion of Salt and Pepper.

Conola Oil

Baste the fish in the bowl of Franks

Take fish and put them in the bowl of Flour, Corn Meal, Salt, and Pepper.

Throw that in the skillet of Conola Oil.

Best fish you will ever taste.

Make sure to add fresh dill to fish whenever you bake it! Mmmmmmm good!

I know this is an aside...but if you are cooking salmon or other strong fish...maple syrup/brown sugar mix will make them absolutely delectable....according to my family, and chefs worldwide! food

Dredge filets in milk/egg wash, then into an even mixture of breadcrumbs/ cracker meal. Salt and Pepper to taste, and fry in 375° peanut oil til brown.

Ballenger's Crispy Dill Baked Crappie



Cover bottom of greased baking dish with boneless crappie filets

Coat tops of filets with Miracle Whip Salad Dressing

Sprinkle dill weed over filets

Melt 4 Tbs. of butter or margarine in a medium sized bowl inside the microwave oven

Add 1/2 cup or more of crushed club crackers to butter and mix until moist but crumbly

Sprinkle cracker mixture over crappie filets

Bake @ 400 degrees for 20-25 minutes

Use broiler for last 2-3 minutes to brown tops of filets

The sweet taste of Miracle Whip and the flavor of Dill combined with butter makes these delicate crappie filets disappear F-A-S-T!

Interesting recipe, that I will try with some of these fresh filets...gonna have to use Hellmans, though... roflmao

Crappie Vera Cruz


What You Need
1/2 cup KRAFT Sun-Dried Tomato Dressing
2 Tbsp. fresh lime juice
8 crappie fillets
2 large tomatoes, chopped
1/2 cup pimiento stuffed green olives, halved
3/4 cup KRAFT Mexican Style Finely Shredded Cheddar Jack Cheese
1 Tbsp. chopped cilantro
Make It

HEAT oven to 400°F.

MIX dressing and juice. Place fish in 13x9-inch baking dish; drizzle with 1/2 the dressing mixture. Toss tomatoes and olives with remaining dressing mixture.

BAKE fish 20 min.; top with tomato mixture and cheese. Bake 5-8 min. or until cheese is melted and fish flakes easily with fork.

SPRINKLE with cilantro.

I have not been able to find the sun dried tomato dressing so I just take 1/2 cup of a mild picante sauce, add 1/4 cup vegetable oil & some cilantro to make my dressing. The only other thing I do different is put some chopped onion on top before I put it in the oven. Y'all are gonna love this recipe. Be sure to wait on the olives, tomatoes & 2nd half of dressing mixture & cheese for the last 5-8 minutes

The baked Parmesan crappie recipe I use is pretty simple,

I saute some fresh garlic in olive oil, pour this into a glass baking dish,
lay filets in the dish, Mix cajun seasoning and grated Parmesan to taste, ( make as spicey as you like )
spoon this mix to lightly cover each fillet,
bake 425 about 15 minutes ,

Put a couple of handfuls of Lays potato chips in a food processor or blender along with cornmeal and spices, bread or use egg milk wash then bread cook in hot fat at 355 degrees....
