Cubed it up rite off the bat, didn't sauce till about 185° .and just a light dusting of seasoning while I sauced them up!!!
If you haven't experienced it yet, don't be giving that to too many people outside your family, you'll create a problem. I'm getting hounded all the time now about when I'm going to do some more.
It's pretty common to find pork belly at the grocery store now days. You might have to ask the butch. HEB has it out in their pork section. it's like a 1' x 1' slab.
