Has any one ever smoked their own cheese? if so, do tell. I been playing around with the idea. Was thinking about firing up my outdoor oven with the smoke option and give it a whirl.

Yes. Perfect day to cold smoke. Leave it in the fridge a week before eating.

I have the cold smoke attachment. I don't have to power on the main unit. You don't want it to get hot.

I just do mine on my pit... it is not ideal but it tastes amazing... would love to do cold smoke but I don't have the setup.
I take a brick of cheese and make a "boat" out of aluminum foil to fit around all sides except the top and put it on for about an hour. Once I see a good smoke color on the top I pull it and it goes straight to the fridge to cool off. If you have the non-stick foil that helps otherwise give the inside of the boat a spray with Pam
Yes it does melt and the texture does change but guys at dear camp fight over it.
I have the best luck with cheddar and mozzarella.

It is so easy. I smoke blocks all the time. Give as gifts and eat.
I have a smoker that has the offset box. Get you a pellet smoking tube from amazon and fill with pellets. Take your little propane torch and light one end. Once it gets going set it in the offset box. Put cheese blocks on far end of grill, away from where smoke enters the grill area, then just wait. I usually smoke mine several hours. I like the pecan pellets best. I also flip the cheese blocks every hour or so, no reason why, but I do. When done dry off with paper towels and put in a baggie. You can eat right away or wait. My favorite now is the smoke pepper jack. Monterey is very good too.
