Does anyone have a recipe for the Mexican style chicken such as that served at pollo loco or pollo regio?

It looks and tastes like simple roasted chicken that has been brined. Use a salt/sugar brine, 1 cup salt, 3 cups sugar in a gallon of water. Keep it cold overnight before roasting or smoking it.

Love us some Regios! 2 weeks ago we grilled some thighs and on a few I mopped with an Alegro/Katchup mix and it was close we will continue to experiment....
