Praline Sweet Potatoes

Praline Sweet Potatoes - 11/26/13 05:10 PM

28 oz can of sweet potatoes or 1 and 1 /2 lbs sweet potatoes peeled, cubed, and boiled.
3 eggs
1 /4 cup butter
8 oz can evaporated milk
1 /2 c sugar
1 /4 c flour
1 teaspoon pumpkin pie spice
1 teaspoon vanilla
Mash together and pour into a 9x9 pan.

Mix together in a small bowl and sprinkle over the top -
3/4 cup packed brown sugar
1 /2 cup pecans, chopped
3 T all-purpose flour
2 T butter

Bake at 350 for 45 minutes.

While I do like rum, I'd say keep it to 1/8th a cup. It's already moist enough. 1/2 cup extra liquid will mess up your consistency.
