sure. it's just corn bread mixed a little thin and cooked in a skillet like pancakes.
2cps cornmeal
1cp flour
6tbs melted butter
2tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 egg
1tbs bacon grease
1-1/4 cp milk
mix all that up and cook like pancakes--i use olive oil and butter to fry. really need some good gravy to sop up too.
this morning i had one with butter, cane syrup and a runny egg on top.
you can add some whole kernel corn too, but usually don't

Use to be a great dive diner and you got two of those with your plate lunch they were fantastic

have you heard why they're called Hoe Cakes? the slaves picking cotton would cook them on their hoes in the field.
