Paper mouth, have you tried cutting the backstrap into thin slices and then dipping it in flour salt and pepper and fry them. Then make a gravy, fresh tortillas and freshly cooked beans, but refry some of the beans. Try it you'll like it
Salt, pepper and sear. Add butter garlic and thyme.. pull from heat. Basted for about 30 second then serve. Rest couple minutes and slice against the grain.
