Boil your chicken thighs in 6 cups of water add a bay leaf and 1 bullion cube. Once they are done cool then de-bone put chicken back in broth also add garlic and onion powder, tomato, and Cilantro. I let it simmer for a couple of hours.
For toppings chop 2 or 3 seranos, and grate mozzarella cheese. Cut your corn tortillas into thin strips and fry till they are crispy. Cut some limes and add to your bowl of soup.
