We always carried our deer to Escalon’s in Throckmorton when we wanted tamales. They make the best tamales I have ever had, of any kind. They have a lace in Albany now also.
Son of the south tamale recipe on-line is the best one for me. Have made them several times. Don't know about seasoning venison for the filling, but the tamales are delicious. I made a batch of chicken/pork last week.
