Prime Rib thoughts

Bought a large Prime Rib at Walmart yesterday for our yearly Christmas meal. It was a Choice grade bone in as we are not near a Sams or HEB to buy a prime. $7.97 a lb and the marbling looked good. I do the “Reverse Sear” technique for roasting it but hear pro and con. I have a friend who considers himself a master chef and he shutters when I mention “choice” but we have had good results in the past with WM prime rib- not so much with Kroger which I believe was “Select” grade. Suggestions or thoughts?

Choice will be fine. And reverse sear is the way to go.

$7.97 is a great price if it was a prime rib.

Most often stores will advertise ribeye roasts in that price range, but at Christmas time you can get some great buys. Tom Thumb has choice ribeye roasts for $3.99/lb if you buy $25 of other stuff. They have prime ribs but sale price is $12.99/lb. Kroger has choice ribeye roasts for $4.97 with no purchase requirement.

+1. This is a no-fail method. I've done them various ways and like this the best by far. Great thing is you can have it ready exactly at the time to eat. Very important to get it to room temperature. I have found leaving it out 1 hr. per lb. after taking out of frig. works.

Choice is fine in my casa. I like to use the 500 degree, 5 minutes per lb method in the oven. 5 minutes X weight in lb- cook time at 500 degrees. Shut the oven off and don’t open for 2 hours. Perfect medium rare....every time.

Prime 1 was $14.99 a lb at HEB as of yesterday:for bonein. The 11 lbr I bought would have been over $160 at HEB. so it will be good no matter what! hah

I use the same recipe as Ox 190, above. I use it with all beef roasts Turns out perfect every
time. Very easy, foolproof.
