The go to bait in West Matagorda bay last week was live croaker. Everyone limited.

I live alone. I no longer deep fry. This is the best pan fried dish that I know. I brought the dish from New Orleans to my side of Houston in 1974. Its kind of like blackened redfish except you bread the fillets and add a wine, Tabasco, lemon, garlic, and minced onion sauce. It's looks a little dirty but that means that its just right. I started it in hot oil and added butter to cool it down. Ate it with a fried potato hash brown.

I've made it with snapper and puppy drum.

Looks tasty. How did you manage to get that fish square-ish....?

Ate it with a fried potato hash brown. It's the hash brown. I also have them with my burgers. I remember someone insulted this picture on here.

That all looks good Bill. Mueniere and Ponchartrain are the two best sauces for fish.
