Anyone got a good home-made chorizo recipe. Have tried a couple out of cookbooks but wasn't too pleased - too bland. Thanks.

I have my mom's homemade recipe that I can post if you like. The main thing is Gebhardt chili powder. I use to buy it in bulk but they do not sell it that way anymore. I have found a company that has deuplicated it really close. http://www.texmex.net/products/spices.htmThey have a Chorizo mix that is pretty good. Just follow direction on bottle. this is the seasoning we have been using. sometimes we don't even put it in cases. we just make it like hamburger taco meat in a skillet. http://shop.zachspice.com/product.sc?productId=30 we would grind up the larger wild hogs we were catching/killing and needed some new ideals on how to use it.

An old original
5 lbs. ground pork 2 tbsp. salt 1/4 cup vinigar 2 1/2 tbsp. paprika 1 1/2 tsp. crushed red pepper 1 tbsp. cumin 6 gloves pressed garlic 2 tsp. mexican dried oregano 1 tsp. coarse black pepper 1 1/2 tbsp. Adams chili powder
Mix everything together and let set in refrig. over night.

Get my spices for all my sausage making needs from www.waltonsinc.com There Chorizo spice like most of there spices come in a bag enough to make 25 pounds of sausage. I highly recommend giving it a try.
