I'm marinating some king fish in a soy based marinade before smoking. When I marinate tuna, I do it overnight using the same recipe. Does anyone have any experience with marinating king fish and how long to do it?

Cover fish with water, refrigerate and let stand for 2 days. Change water every eight hours or so.
Eight to twelve hours before fish is to be cooked, drain water and cover fish with Italian salad dressing.

Thanks but I already have it marinating. Just wanted to know the length of time people recommend.
