2 feet of 80# wire, 5/0 treble,no weight, big cut bait, let them run, you have to learn by experience when to set hook, it can be difficult. good luck

I personally like a carolina rig. What I do is tie about two to three feet of 124lb wire to my line with my hook obviously being at the bottom of the wire and a weight being at the bottom of my line or just above the wire I like to spool my reel with 80lb power pro (braid). Sometimes I dont even use a weight, this is because I typically always have a big piece of cut bait or a pretty good sized tilapia on the hook but however seems best for you!
I have caught countless gar using that exact same setup/rig which I have just mentioned with my biggest weighing in at 175lb

Honestly, I haven't really payed muched attention to that but I personally prefer a big 12/0 gamakatsu octopus hook... and I have heard the big river bait hooks works even better! Trebles get the job done also and my big gar was caught with a treble! Many of the gars my dad, cousins, uncles, etc have caugh are with trebles but somehow I feel more confident when I don't have a treble tied up!

Most people go with 1 of three options: Big J-Hook (10/0 or bigger), I like the big rivers when I am using them but check out super J from team catfish which is about the same pattern but cheaper. Another option is 2 trebles spaced about 3.5-5" apart size 3/0-5/0. For either of those two I prefer an instant set, some fish will be missed but 100% of the time fishing on my own I am using 1 of those two choices. 3 is a single treble and allowing them to eat it, this is the surest bet on a hook up but they still drop it from time to time and you have to hope they don't go in snag if you are not in a boat. Letting them eat it is easier for many of my clients, many are not comfortable with the amount of force or timing needed for an instant set. Hope this helps.

Hope this helps. good write up, and let me just add that gar are very picky i guess or spooky they will drop the bait if they notice something is wrong or if they feel the hook this is why probably using 2 trebles would be a good idea if you are planning to do the hookset right when you feel the bite you dont give the gar time to i guess investigate the bait! using a single hook might increase your chances of the gar swallowing the bait since there arent many sharp points poking him!

I could be wrong but I do not personally think big predator fish mind sharp points, I think they get used to it. Think about it: Nearly everything they eat has sharp fins: catfish, drum, carp, sunfish, and so on. But I do not intend to argue the point, if they notice something off most of the time they are going to dump a bait even if they carry it 100 yards, they are bad about doing it just from the pressure of the line laying against something while the reel is in free spool.

IMO it depends on where you fish. A spot i know for huge gar by me has a lot of trees in the water that has fallen in so letting it run very far would be a bad thing especially fishing from the bank where you cant walk the bank since its lined with trees. I have lost every big gar i have hooked cause of letting them run with the bait so think next time i will try the double hook rig.

I've had a good hookup percentage with smaller gar using the double treble rig! Haven't had the chance to try it out with bigger gar
