I'm a newbie boat fisherman, so I apologize if this is common knowledge. Anyway, this last weekend I was fishing at Lake Ray Hubbard and caught two Channel catfish that had yellow flesh. Normally they dont have that yellow tint. I didn't think anything about it until I filet'd the fish and noticed the flesh in the fish was all yellow! The meat looked tainted, and I was afraid to feed it to my family so I didn't eat it. What causes this? I did a google search on this subject, and it seems everyone has their own OPINION on why the fish flesh is yellow. I wondered if anyone here has seen this, and if they know the real reason why the fish flesh is yellow - and if it's safe to eat?

It could be fat in the meat but a llot of times channels are a little off colerd in the meat

Very normal in channel cats, in fact I don't think I can ever remember cleaning one that didn't have the yellow. Not sure what it is, it isn't fat though, its just the color the meat is. You typically don't see it on the 12 inch ones, shows up when they get a little bigger.

Yup agreed, nothing wrong with them. Filleted a few today, see it a lot in channel cats.

Im so spoiled on blue cat now I give the channel fillets away lol! But yes very common in channels!

Always there to some degree in channels. Even the smaller ones wil will have yellow meat around the top edge of the filet.

LOL. That is why I quite eating channels. I found blues and the fillets are so much better looking. I agree that once it is fried you can't tell the difference in blue and channel. I don't fry fish though and I do like the meat to look appetizing before I cook it. rolfmao

If you want to feed channels to your family they are safe. Just know that the meat will be yellow.

The only bad thing about that is that there are some nights where channels are the only one of the three main species of catfish that are biting. I don't know why that is, but it happens sometimes. So by not eating channels, you are more likely to be skunked.
