Seeing a lot of bait fish in 6 - 8 ft of water on the fish finder. Every now and then, I will.see a bigger fish around them. What should I be throwing? Crankbait, spinnerbait?

What kind of fish? Crankbaits and spinnerbaits are both a good choice. If it's bass, white bass and or hybrid/stipers you might also consider a Rum Runner. They are made with a super soft and supple plastic and the shimmy they impart, simply drives the fish crazy.
