An experiment in the kitchen yesterday turned out pretty good.

Ingredients:
2 lbs. country style ribs
1 can beef both
1 can cream of mushroom soup
1/2 can vegetable broth
1 handful of chopped fresh cilantro (about 1/2-3/4 cup,I guess)
1 large onion, thickly sliced
6 small red potatoes
2 large carrots, whole
2 fresh jalapenos, seeds removed and chopped
3-4 sliices of bacon, halved
1-2 tsp. flour

Directions:
Mix beef broth, cream of mushroom soup, and vegetable broth in large pot. Add potatoes & carrots. Layer onion slices, cilantro, & jalapeno on top. Place ribs on top of vegetables an lay bacon slices on top of ribs. Cover and cook in 300 degree oven for 90 minutes. Remove cover and cook an additional 60 minutes. Remove ribs and potatoes to a dish. (The ribs will fall apart when you do this.) Add flour to gravy and boil on stovetop. (High heat and stirring constantly until it reaches desired thickness.)

I made this yesterday (had to substitute 1/2 beer for the vegetable broth) I give it an 8 out of 10. And definately on the cook again list. Thanks for the recipe.
