Standard bass tackle will work fine for snook, trout, reds. You'll need more specific gear for larger "big game" species like tarpon, shark and offshore species. I guess you need to be more specific as to what you intend to fish for.

Well a couple guys were catching good sized mackerel right off the beach kayaking out a lil ways. With cigar minnows. What kind of rods/reels do you recommend? Steel leaders??

What's your budget?

Larger Abu's and Ugly Sticks are probably the least expensive. You could spend a bit more and go with Penn reels or go even more expensive and go with Shimano or Avet reels.

A good 6'-7' heavy action rod with a good backbone would be my choice if fishing from a 'yak.

30 lb mono and most definitely steel leaders for anything in the mackerel family. They're all very toothy. The big kings will smoke the drag on a reel that's not up to par.
