I don't catch a lot of flatheads, but growing up that is all my father fished for and man, even the big ones were great eating. Now, on a really big one, he would trim off any red meat( very little) and any obvious fat. He would cut the meat in around four inch length and two inch wide chunks and batter and deep fry them. Some of the best freshwater fish I have ever eaten.

A 24 inch channel cat is nothing to scoff at. That's a decent fish.

Yeah, you're right. I sometimes get blinded by the huge catfish that I see in magazines on and TV, and tend to underappreciate smaller, but still decent, ones.

Any Fish meat looking translucent and seeming mushy after cooking was just not cooked long enough. I like all catfish, but I vote for flathead as the best.

If you ain't been to a good ol' flathead cookout, you don't know what your missin'. Been to a couple out in Palestine, those guys could've charged $20 a head and still have everyone satisfied and barely walkin' after the feast. Throw in some live music....you got yourself a primo event brotha.
