I know there is more than one way to skin a cat.
Looking for new ideas that are different from the way i usually do it.

1.How do yall prefer to clean your catfish?

2. Any secrets for freezing and preparing the fish?

1)Pierce the lower jaw with one of those fiber-rope stringers and hang him from the closest tree branch or nail his head into any available fence post.

2) Make a cut just behind the gills all the way around.

3) Cut the dorsal fin off.

4) Use a pair of pliers or a skinner to remove the skin. (Sorry y'all, I tried the "skin-on" fillets......once. sick)

5) Hang him head down on a fillet board (or a 2x4 with a pair of Vise-grips) and start filleting from the tail with a well honed stainless steel knife.

6) I freeze fish in water.

7) Rub the meat down with lemon pepper .

8) Squirt it down real good with olive oil and grill or put it in a bag full of cornbread mix/ Fiesta brand "Quick Chili Mix" and fry in a cast iron skillet.

A good sharp knife is deffinately essential when cleaning a fish..but no matter how sharp the blade still gets slime as you cut through the skin, which then gets in the meat as you move the blade down the fish when filleting.
If you skin them first, the slime taken out of the mix..and when your cutting your fillets the knife will come in contact with the meat only. I do it very similar to SIBER..when i freeze them i do the same add water to the bag which is important but i also add salt or garlic salt before freezing em'..i find it gives a cleaner taste in the end...

Thanks,keep the ideas coming...

I use a manuel knife and fillet them just like any other fish. The smaller ones I skin with a pair of skinners and keep them whole.

An old man told me once, you can use a football needle, put it under the skin and give it alittle air and the skin will seperate from the meat. Never tried it, wonder if it'll work.

we fillet them with the electric knife

Hooking a fish is like playing string with a cat. The exact size, shape, color of string matters less than how you wiggle it- and little cats are easier to fool than big ones. John Gierach

I reckon if you don't rinse your fillets, steaks or just about any seafood or meat before cooking after skinning, cleaning, it would have a bad taste too.

Never had a problem using skinning pliers, regular or electric fillet knife and ending up with bad tasting catfish, unless the flesh is very fatty, then it can give it a real bad taste.
