The best answer is quickly because they supposedly do not do well frozen or kept on ice. I think I would fillet them and dredge in cornmeal and fry.

Or try this that I use for Tilapia.

line a flat pan with aluminum foil and set the broiler to high.

In a bowl take a quarter cup of mayonaise, the juice of half a lemon, a dash of louisianna hot sauce, the zest from the lemon half before you squeezed it, and 1 package of splenda. Mix well with a whisk. Pour mixture over 4-5 nice fillets and then sprinkle generously with parmesean cheese. Put under the broiler for 5 minutes. ENJOY.

Heard that also about cleaning them fast.......myth. Or at least from my experience it's a myth. Kept sandies twice now, packed them in ice, cleaned them two days later, and the meat was fine. Not mushy, fried up great. Very good eating.

well i used to soak them with salt,cutting thai pepper, and lemon grass, (over 1 hour), then fried and eat and the rest just clean and frozen it. I love sand trout.

Sand trout are fine if kept on ice for a while. They get mushy if frozen, then thawed.
