O.K. guys I am looking for a rub to make that will work for chicken and brisket. Being that I work for Tyson we are going to cook about 2 cases of leg quarters and 4 briskets on Monday since my guys have to work. So I am open for any and all suggestions and if anyone has a mopping sauce that they use I will make that also.

As far as rub, I find it hard to beat Stubb's

Brown sugar, kosher salt, paparika, oil, black pepper, ground mustard, and honey.

i marinate in Stubbs for a few hours. then pull the meat out and rub it with Natures Seasoning, a little garlic powder, and some brown sugar...... slow cook to ensure tenderness

Brisket-Just coat it with mustard, let it sit for about an hour before putting it on the pit. Chicken-Tex Joy or Goode Co. dry rub

Sea salt, pepper, with the fatty side up ,and cook it slow slow .

http://www.kanakseasonings.com/I know it is late for your post but this is some good stuff. It has a lime hint and works on all meat. I use it on trail mix, salmon and crackers, salad, chili, and as a rub for ribs, chicken, and brisket. Works well with mustard base or without. I even used it to brine chicken.
