Sorry I don't have a recipe, I was hoping to get some opinions on your idea of which fish fillet taste the best to you. Although I have been a member here for 9 years give or take, it is apparent a lot of the vocal members are from the DFW area. That makes since, lots fishable water in that area. That said what is your favorite, local or not,salt or fresh.

In My Opinion:
We in North Texas are cursed that the only local fish we can get are warm water, freshwater fish. That being: Largemouth Bass, Crappie, White bass (Sandbass), Various Catfish, Carp, Drum, Gar, Sunfish, etc. Someone else will come along and tell which are the best of those to eat.
If we were lived closer to the coast, or further North there are variety of fish that are easier on the pallet. But none of us want to live in the Fridged North or the Humid South, so we make do with what we have, and practice a lot of Catch-and-Release, because it's just not worth it; when I can go buy Shrimp, Trout, Halibut, Salmon, etc.
I'm glad there are wine drinkers in this world ..... it saves more beer for the rest of us. Hopper

Corn meal and 375 degrees canola oil. Best recipe there is.

For me crappie is the best, but then again that's the only fish I eat.🙂 Egg wash and crushed saltine crackers and I use lemon pepper for seasoning. Canola oil 350° for 4 min.

for me, it's, Freshwater: walleye or crappie, Saltwater: red snapper or flounder. those are my favorites, but hard to beat a good ol redfish or blue cat.

I`ll eat just about any of them. I`ve gotten some catfish @ HEB that I wasn`t crazy about though. I`ve ate lots of Hybrids, Stripers and Sand Bass and like better than catfish any day. Never understood the dislike from some for the fish. I`ve cleaned all that I`ve ever caught and had lots of fish fries for family and friends over the past 30 years and never had a single sole say they taste bad or fishy. Best fish I ever fried was some flounder. My uncle caught some on the coast years ago and I cooked it @ one of our family fish fries.

For me crappie are the best tasting freshwater fish to eat, saltwater too many to list but if I did pick a few, red snapper or sheepshead.

Walleye, yellow perch and bluegill Yellow perch is a very nice clean tasting fish. Large flaky filets too.
