Finally in a situation where I could head down to the Gulf and get a guide lined up. At minimum I'd really like to catch a Redfish or two as it's on my bucket list. Anything other fish beyond that is a bonus. Would also like to harvest them. Anyone know a reputable guide? Any recs. would be greatly appreciated! Thanks in advance.

In a few weeks, when the cold fronts start, the redfish will be around the jetties. Redfish are insanely stupid right now here. Call Nathan who posts reports and get you a day sight fishing.

Is it pretty easy to find a place that'll fillet and bag seal your catch? Thanks for all the advice.

All the guides will clean them for you, but I don't know about vacuum packing them. Ziplock bags for sure.
