Did that Striper still have the red meat on it? I have always removed all the red meat and love striper. But anytime I have eaten striper others prepared that had the red meat in it it wasn't good to me. Love the jalapeno brine idea.

Bleeding the fish or trimming out the red meat is more important for fish that are frozen and thawed.
Bleeding by cutting the gills is faster and easier than trimming in many cases.
