I mostly fish for white bass and can typically catch a bunch when I try using the Dennis Christian and Bob Maindelle Mepps lure techniques. This Sunday my buddy and I caught 2 nice Crappie on Belton 12 1/2 and 13 1/2 on Belton. My typical fishing partner loves Crappie So much that while I have caught a few here and there. I have always given them to him. Well I decided to keep these two and had them the way we did when I was a Kid, Crappie and Eggs. Cooked in butter salt and pepper. Wow just wow, really delicious. I was surprised how much meat came from the 13 inch fish, both males. [Linked Image]

Crappie accept seasoning better than most of the Pelagic fish. Do we detect an over easy eggs topping ? WOW

Not over easy, basted- just left the cover on for a minute, the steam cooked the top of the eggs. It was fantastic!!

Crappie Enchiladas, with homemade jalapeno sauce.....cooking that crappie in a little butter first. I was testing my griddle for camping.

Blackend on cast iron is great, no butter here, cooked this for my wife, just a little oil, my go to seasoning is pepper and Tony's, 50/50, maybe a little heavier on the pepper. Love this little griddle..
