If you don't deep fry often, how do you preserve the frying fat or oil?

Haven't used my jug yet. I ordered it months ago for briskets and steaks. At $30 a container from Amazon, I don't want to waste any either. One can smoke that tallow also. Just put it in a metal pan while smoking your favorite meat and return it back into the container. Great flavor additive for beef.
