I had a couple of QA folks in town today. One from our brewery in Colorado and one from Wisconsin.
They had been in Houston and Austin earlier this week, so I assumed that they already had bbq, but when I asked them what they'd like for lunch today, they said they were disappointed because they expected world class bbq in Texas.
One of our younger guys had taken them to a place in Austin and they said the brisket was dry and disappointing.
We were on the north side of Ft Worth and I told them if they're willing to try again, I know a guy.
We went to 407 and of course they were busy it being lunch time on a Friday. I told the young lady at the counter to tell Brian that Beer Money said hello and she came right back out and said he's coming out.
He came out and said hi to my coworkers and we chatted for a minute.
Our food came and my coworkers couldn't stop raving not only about how the brisket was the best they ever had but also the street corn, mac and cheese and the brussel sprouts.
I surprised them with some banana pudding and one of them was scraping the hell out of that container trying to get every bite.
So, thanks Brian for allowing me to send those folks back to their home states having eaten the best brisket they had ever had.

I know you miss Texas Q, but it's Friday in Wisconsin, so, walleye or perch tonight?

Our Friday night get-together got canceled due to circumstances beyond our control, usually it's walleye, but supply-chain issues are tightening up the availability.

We're evaluating our choices for next Friday . . . . maybe cod or flounder ? ? ? Impeach Biden . . . .

He's the best of the best.
For my wedding up here everyone wanted some Texas BBQ. I had BBQed for the wife's family before. So they knew Iknow the pit. But in my mind I'm thinking how the hell am I supposed to man the pit on my wedding day. So I compromised. Baby backs are easy enough. So I did 4 racks of those. And had a brisket shipped in from 407. Got ahold of Tman. He cut me a deal. Made sure it was packed right. Got it to me the day before with instructions to reheat. My ribs which are loved by many were barely touched. Wasn't much of the brisket left. Enough for a couple chopped beef sandwiches the next day. They still talk about it almost 5 years later. Even my vegetarian daughter in law gave it a try, and said it was delicious. Come to think of it, she now eats meat more often. That was probably the catalyst.
