I fried up a 2# channel out of a local lake and the meat was tough, almost like rubber. All the fish I've cooked out of this lake before tasted fine. Anyone ever experienced something like this?

No, I've fried plenty of catfish and never had one to taste like this. Someone said it might have something to do with the spawn.

Not always under cooking, I have seen it in pond raised cats when you stop feeding and they loose weight it makes for some tough chewy meat .So with that said the same could happen in the wild.
