Silly old you; you left the red meat on the fillets. Take a little more time and cut it off. Your fish will be much more enjoyable.

Silly old you; you left the red meat on the fillets. Take a little more time and cut it off. Your fish will be much more enjoyable. Thanks for the comment. We've done things different ways and learned that we don't mind the red meat in fillets that are never frozen. The flavors in that area get stronger and objectionable if they are frozen and thawed. But if the fish is bled, the fillets will look nearly the same, but can be frozen without trimming it out.
