Do you fillet perch or head, scale, and gut?

I have always scaled, cut off the heads and gut my Bluegill (Sunfish). For all other fish I fillet them. I am going to fillet the next batch of Bluegill (Sunfish) I bring home to eat. Enjoyed the video.

I filet the large sunfish but the filets don't taste quite as delicious as the mid-sized fried that I gut and scale. Maybe the bones impart some flavor. On the other hand, can fry more filets at one time than the gutted fish. One of life's tradeoffs.
