Ok, now this is getting stupid.
Jack Crevalle was bad, nobody ever eats on of those bloody nasty things.
HARDHEAD? I'll scrape the mold off a cheese sandwich before I'd eat hardhead.

Actually, there are quite a few people that eat H-Heads. Maybe not around here but on the East Coast they do. First ya got to cut the tail off and let it bleed.....Geek didn't do this or fillet it right anyway. The fish has a rib cage and the meat on the inner (Belly meat) side is good also. No bones and makes for a good third fillet!!

That is exactly the way I fillet channel cats. I have never cleaned a hardhead. My stepson kept some gafftop from our last Louisiana trip.
He said they were " OK " not as good as channels.

My wife trims out the red meat carefully from the gafftops, and we like them slightly better than channels.

Big heads, low on meat, but gafftops are good eating. I'd only eat a hard head if I had to.

I've still got knots in my fingers from getting harpooned by hardheads as a kid. Other than taking care of a dead body dumped in the bay, I find no redeeming qualities of a hardhead.
