To minimize having alot of red meat. Bleed them out right away when you catch them. Thank me later. If only someone would make a video to show how to do this. Plenty of videos on youtube. https://www.youtube.com/watch?v=oYK490TnFlw

Fillets brushed with butter and covered in panko. bake at 350 degrees for 20-30 min. Comes out delicious. serve with buttered French bread and vegetables.
God does not charge time spent fishing against a man’s allotted life span. “Fishing is much more than fish. It is the great occasion when we may return to the fine simplicity of our forefathers,” Herbert Hoover. “I spent most of my money on fishing. The rest I wasted,” Author Unknown.

100% agree if cooked properly is amazing just like duck or goose. if I'm feeling lazy the go to is tacos or striper alfredo. When I have time blackened striper with a white wine sauce and roasted veggies.

I'll have to support Mo on his half-shell comment. I too was VERY surprised at how good grilled striper on the half shell tastes. I think Redfish is about as good as it gets and while a properly grilled striper doesn't quite meet the bar, it gets very close. The key is making sure you can flake the white meat off while avoiding the red meat.

There are so many ways to cook stripers. My fam are not too picky about food (thank God) but they like striper over whites and hybrids. My chef wife filets fish with a manual knife cooks half shell, brushes the filets with her secret sauce and uses panko to oven bake also. All yummy! I do fish tacos, poboys, fish sandwiches for big fam gatherings and can't make them fast enough. Lol. We are so blessed Texoma is only 1 hr drive, with healthy striper population and i don't have to drive 5 hrs every year down to the coast for my-big-fish fix. Lol

If one doesn't like the taste of Stripers, its the cook !!! Amen..............striper and hybrids are one of the best freshwater fish to eat.The simple removal of all red meat is all it takes or grilled on the half shell just avoiding the red meat.

When I used to target stripers and sandies, I would put them in a foil pan with melted butter and citrus juices and zest. My favorite would be orange zest and juice along with lemon juice, too. I would put lemon pepper or just black pepper and let them cook until opaque. I would take sprigs of rosemary and lAy them in the pan for flavor. Anyone that says they don’t like striper or sandbass has never eaten it this way. It’s as good as any fish I’ve ever eaten.
