Cut the red meat from the middle of the fillet and fry the fillets in corn meal with a liberal amount of Tony C and call it good.

The red meat on a striped fillet can make it taste a bit strong.

Put the striper on a cedar plank, cook it on a grill until the fish is pretty well done, when finished throw the fish away and eat the cedar plank. Moral of the story, I wouldn’t feed a striper, hybrid, or sandbass to my dog. They are NASTY, I don’t care how much red meat you remove, how much you soak it in milk, hot sauce, use a special fish fry, doesn’t matter, they are disgusting.

I see him struggling with the meat sticking to the grill and there is an easy way to stop that sticking if you take some wax paper and after the grill is hot wipe the grill with the wax paper and the food will not stick.

Cut out all red meat. Big pot with boiling water, salt and crab boil. Bring to a boil, add fish, let come back to boil then kill heat. Let soak 10 minutes. Serve with cocktail sauce, melted butter, and some Old Bay seasoning. Quick, cheap, and healthy. The Guides here (Texoma) call it Texoma lobster. Works best with bigger fish fillets.

It is perfectly fine fried like any other fish as long as red meat was taken out prior to freezing and/or cooking.

To minimize having alot of red meat. Bleed them out right away when you catch them. Thank me later.

If you leave the skin on, you can do Striper on the half shell, better than redfish , IMHO.

Just like redfish , when it is done , flake off the white meat , leave the red flesh on the skin. Make Tacos.

SUPERB if kept cold,cleaned properly and all red removed. A recipe most can’t get enough of is melt butter and sour cream together in a “white sauce” lay the fish fillets down in a baking pan lightly coat in sauce then cover with Parmesan and panko
Bake 375 for 20-25 min then broil the top brown
It is very good

Maybe with freshwater fish I got spoiled on crappie and walleye, saltwater fish on trout and reds. When it comes to freshwater fish, I think I’d go hungry before I ate a true bass species other than a yellow bass. Sandbass, striper, and hybrids are just gross to me, I’ve tried every recipe in the world and I can’t find something that tastes good. When it comes to freshwater fish, walleye, crappie, black bass, catfish, and drum are all better than striper or sandies to me.
